I have made these cookies a couple of times because they are so delicious, quick and easy to make. There are only 4 ingredients that I'm using and the best thing is they are gluten free cookies so that my friend (who has Celiac) can have it.


Here is the recipe from Taste.com.au (with my modifications in blue)
1 cup (260g) crunchy peanut butter (I use the smooth one)
1 cup (200g) brown sugar
1 tsp bicarbonate of soda (I use baking powder)
1 egg, lightly beaten
1 cup (185g) dark choc bits (I didn't add this)
1. Preheat oven to 200°C. Lightly grease two baking trays and line with non-stick baking paper. Combine peanut butter, sugar, bicarbonate of soda or baking powder and egg in a bowl. Stir in choc bits.
2. Roll teaspoonfuls of the mixture into balls and place on the prepared tray. Press lightly with a fork. Bake for 8-10 minutes or until light golden. Leave to cool on the trays then place into an airtight container.

ReplyDeletewow they look soft and chewy! hard to imagine there are no flour in this recipe! ive recently finished my jar of peanut butter - gotta stock up again and give this a go. i think i mite add the choc bits and mb a lil bit less sugar (do you think it's too sweet or just right?)

ReplyDeleteVivienne, I think the sweetness of these cookies are just right for me. There is lots of saltiness in the peanut butter itself so this amount of sugar is the right amount to balance the taste. I would say you can reduce the sugar amount just a little.
My sister just found out that she's allergic to gluten, and she has a real sweet tooth, I will definitely be sending this recipe her way :) The photos are absolutely lovely too!
