Happy 2011! My family and I had a great time for this Christmas break and I must apologize for not blogging at all for the past week because I was busy with lots of entertaining and short trips.
It seems like salted caramel has been trendy lately and thought that this will be a great treat for parties. I wrapped each individual piece of fudge with baking paper and then with colour tissue paper and serve them as gifts or party food. This idea works very well for me.

Here is the recipe from the Super Food Ideas, Dec 2010 issue
395g can sweetened condensed milk
1 cup brown sugar
2 tbsp glucose syrup (I replace with extra golden syrup)
1/4 cup golden syrup
125g butter, chopped
180g white chocolate, chopped
1 tsp sea salt flakes
1. Line a 20cm sq pan with baking paper. Place condensed milk, sugar, glucose syrup, golden syrup and butter in a saucepan over low heat. Cook, stirring, without boiling for 10 min or until mixture is glossy and sugar has dissolved.
2. Increase heat to medium-low. Bring to a simmer, stirring. Cook, stirring constantly for 6-8 min or until mixture thickens and comes away from side of pan. Remove from heat. Stir in chocolate until combined and melted. Spoon into prepared pan. Smooth top. Sprinkle with salt, pressing in with back of a spoon to secure. Set aside for 30 min. Cover with plastic wrap and refrigerate for 6 hours or until firm. Cut into pieces. This recipe makes approximately 64 pieces of 2.5 cm square pieces.

ReplyDeleteSue: I wrapped each of them with a small piece of baking paper first and wrapped it again with a larger piece of colored tissue wrapping paper and twist both ends to make it like a lolly. Hope that will help.
Lena: The fudge melt easily in my mouth with trace of buttery, salty, sweet milky. The pieces are quite small so there is not much to chew on :D

ReplyDeleteGolden syrup is not corn syrup. Unlike corn syrup, it is amber colour. Golden syrup can also be used as a substitute for corn syrup. Hope that this info would help.
