Essence of Orange-Chocolate Cake (THB)

Judging from everything of this cake, I wouldn't think this tastes and looks like a coffee cake. For mine, I would prefer to name it as an orange-chocolate yogurt slice instead.

This cake recipe is mostly adapted from the book, "Coffee Cakes" by Lou Seibert Pappas. It is chosen by Eileen from Hundred Eighty Degrees for our 17th The Home Bakers bake. THB is an baking event organised by my friend, Joyce from Kitchen Flavours. With a group of gorgeous ladies, we are baking all recipes from the book, "Coffee Cakes" by Lou Seibert Pappas until every recipe from this book has been baked.

For some reasons, I have made a few changes to obtain this final texture of my cake and wonder if the original recipe would yield a similar result. In the book, Lou classified this cake as a dessert coffee cake; a bittersweet cake with the combination of orange (including its peels) and dark chocolate. She uses raw orange including its peel and dark chocolate wafers to create a bittersweet taste and also processes the orange and raisins for a pudding-like texture. For me, I don't really like the addition of raisins into the always-classic bittersweet orange and dark chocolate combination and replaced the raisins with extra orange in this case. Furthermore, I don't really like the idea of eating raw orange peels in my bakes and prefer to cook my orange before baking in this case.

With the addition of yogurt, I reckon that my cake by definition should be more like a yogurt slice than a cake. It has a dense pudding-like texture with heaps of bittersweet taste. Overall, I'm feeling neutral with this bake. I like its orange and chocolate bittersweet taste but not a huge fan of its compact and dense yogurt-y texture.

And, here are the notes and modifications that I made for my bake.

My ingredients list (which is 1/2 amount of the original recipe)

1 large orange, scrubbed and cooked in boiling water for at least 1 1/2 hrs
60g unsalted butter at room temperature
70g sugar
1 large egg
165g all purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup yogurt
40g dark chocolate chips
(I used Callebaut chocolate with 70% cocoa)
40g dark chocolate pieces
(with 85% cocoa)


Modifications that I have made from the original:
  • Instead of using raw orange, I have used boiled orange instead.
  • I have replaced 1/2 cup of raisins (for half amount of recipe) with extra half an orange.
  • I have reduced the sugar content of the cake from 100g to 70g for 1/2 amount of the recipe.
  • I have replaced baking soda with the same amount of baking powder.
  • I have replaced chocolate wafers with dark chocolate chips and dark eating chocolates.
  • For half amount of the recipe, I have baked my cake using 15 cm x 25 cm loaf pan at 160ºC fan forced for 30 mins and another extra 5 mins with dark chocolate topping.

  4. I just came from Joyce's place. Hers look more like a cake but I agree with you as yours look like a slice to me. Zoe, 1st time of seeing blending the orange with the "skin" as well! Wah, I hope to become your home guest one day as you always use the best chocolate ingredients, hehe!

  7. This is a very interesting recipe. I see you using a big orange, cook it with its zest before blending it. Chocolate chips, dark chocolate and raisins as the ingredients, rich and yummy.

    Yes, it does look like a slice to me. Sorry to hear that it did not turn out like a cake texture. And interesting that you cooked the orange puree.
    I've got to agree that the combination of orange and chocolate is very nice. Anyway, glad that you've given this bake a try.

  11. Zoe, I baked orange butter cake with boiled orange, that is the best orange cake that I have eaten. Your cake looks nice to me especially with the chocolate but like what you said, it looks like slice than cake.

  15. One question Zoe. Will it not be bitter with the addition of the skin of the orange... the cake sounds so heavenly

    1. Hi Vimitha,

      Orange skin itself especially the white part can be pretty bitter and the addition of the whole skin can be bitter in taste. However, the tolerance of sweetness can depends on individual.

      I reckon the cake with cooked or raw orange will be very different again without the orange skin.

  22. LOVE chocolate and orange together! I tend to favour a recipe by nigella lawson which uses the whole (boiled orange) and chocoalte together, just blended! but this looks ace and i'm itcvhing to try this!

  23. Zoe , love the chocolate and orange combo ! The texture though looks like a steamed cake than a baked one :D Don't know if you've seen Nigella's chocolate orange cake recipe , her recipe calls for oranges to be boiled as well .

  30. The texture of this cake reminded me of a cake I made recently - Donna Hay's Lemon Yoghurt cake. It looked gorgeous, it smelled divine, but I was quite put off by the densed pudding like texture. Really pity because the balance of taste and flavour were perfect. It can be that the measurements with Cups in Australia are different to the Cups measurements used in Europe/UK or USA?

      Yea... Like you, I like the taste of the cake but not the texture...

      I think the Australian cup measurements is about the same as the US/UK ones. 1 cup is 250ml, 1 tbsp is 20ml but can sometime 15ml, 1 tsp is 5ml.

    The cake looks so good! I've never put in whole oranges in while baking before. I usually only squeeze the juice out. How does it affect the flavor, texture and everything?

      I realised that all my friends who have baked this cake with raw orange has yield a more cake-like texture. Mine is really moist and dense.

  45. Zoe, it's a good idea to boil the orange before using, maybe next time I'll try that when I attempt this recipe again. Also, I would never have thought of substituting the raisins for more chocolates. Though you are feeling neutral about this bake, glad that you still went through with it :):) Till our next fun bake!
