Morning Glory Breakfast Cakes (THB)

Good Morning!

Did you have a good breakfast today? I did. I ate one serve of Sultana Bran Buds with milk and one morning glory breakfast muffin cake. How about you? What did you eat for your breakfast?

Here are some delicious breakfast ideas. How about ...
Rolled oats
Eggs - Boiled, fried, scrambled or poached?
Pancakes - Wholemeal, with syrup or sugar?
Cereals - With wheat bran?
Milk
Yogurt
Fruits - Fresh or dried? Apples, berries or raisins?
Nuts - Roasted? Or salted?
Carrot??? - LOL!

All of the above?

The Home Bakers are baking a cake or mini cakes that contains all the above breakfast ingredients. With no fat added, I reckon this "breakfast -rojak" cake recipe sounds pretty crazy or maybe just a little bit crazy...

This cake recipe is from the book, "Coffee Cakes" by Lou Seibert Pappas. It is chosen by Lena from Frozen wings for our 23th The Home Bakers bake. The Home Bakers (THB) is an baking event organised by my friend, Joyce from Kitchen Flavours. With a group of gorgeous ladies, we are baking all recipes from the book, "Coffee Cakes" by Lou Seibert Pappas until every recipe from this book has been baked.

First, I gave my son a bag of my breakfast cereal to "torture"...
Then, we mixed all breakfast ingredients to form a cake batter.

"Mum, you are chewing the paper!" - These are delicious but sad that the cake sticks onto the liners.

And, here are the notes and modifications that I made for my bake.

My ingredients list (which is one-third amount of the recipe)

17g old fashioned rolled oats, pre-roasted
1 small egg, 60g
40g dark brown sugar
1/2 cup or 140g plain yogurt
1 tbsp dark molasses, blackstrap
1/3 tsp vanilla extract
50g all purpose flour
50g whole wheat flour
2/3 tsp baking powder
1/4 tsp salt

1/3 cup my regular wheat bran cereal, Sultana Bran Buds, roughly crushed
(this is the amount after crushed)
1 small carrot, peeled and shredded, 1 cup
1 small apple, peeled, cored and shredded, 1/3 cup

(I used Royal Gala)
45g frozen blueberries
35g walnut, chopped and pre-roasted
35g dried cranberries
1/3 tbsp raw caster sugar mixed with 1/3 tsp ground cinnamon

 
Modifications that I have made from the original:

  • Instead of baking cake in rectangle or square baking pan (9 x13 inch for full amount), I have baked 7 of these cake using standard-size muffin cups.
  • Instead of using baking soda, I have used baking powder.
  • Instead of adding wheat bran, I have used my sultana bran cereal.
  • I have added all the ingredients listed in this recipe except for flaked coconut.
  • The cakes were baked at 160°C fan forced for 25 min.

  3. yes, it is a rojak cake! LOL! comes with bits of everthing! no more rojak cake for breakfast, guess what? i'm having gruyere bread for breakfast..just baked that 2 days ago :)

    Somehow I knew this cake would go well with you! Haha! This is great for you as you are training for your run. Packed with wholesome goodness :)
    Unfortunately, this bake is not for my family, they do not like lots of ingredients in it! Anyway, this is an interesting bake using no oil or butter, yet the cake is moist and soft from the grated carrots and apples. I'm rather curious to see the other reviews from our fellow bakers!

  9. Zoe, I'm so shallow, I thought that pink cupcake liners won't show up in your blog coz you have a son mah, forgetting that you are a girl too, hahaha! Well, my bossy daughter wanted me to steam some home-made "siew mai" for breakfast so this was what we had this morning. I can see that your Morning Glory Breakfast Cake looks very similar with Joyce's bake, Lena's bake on the other hand is drier, which looks a bit like breakfast bar.
