Chocolate Chocolate Chip Muffins (Nigella Lawson)

It is a rare opportunity that my boy and I had a chance to bake...

Since my boy started schooling, we have been juggling with school, homework, after-school and weekend lessons. Plus, we are always not at home during school holidays for country drives, outdoor picnics, walking at national parks, interstate or overseas trips.

My boy and I missed the days that we were baking and so I have specifically make time and opportunity for us to bake these muffins

"Mummy, let's bake some chocolate chocolate chip muffins!" Instantly, I was thinking of two recipes. One is the recipe from the book, Feast by Nigella Lawson and Another is from the book, The Ultimate Muffin Book by Bruce Weinstein and Mark Scarbrough and I have seen the recipe from Domestic Goddess Wannabe. I love to try baking both recipes but we shall bake the ones from Nigella Lawson first and the other recipe later. 

Yippee!!! Let's keep calm and start baking ...

I was measuring the liquid ingredients while my boy was preparing the muffin tray.
Then, all we did was stirring and sieving.
"Hey!  I can see you are putting too much chocolate chips in your "angry birds" muffins!"
Can't wait to try these muffins!

For this bake, we have also started a new baking game to entertain ourselves... We called the game, The Crazy Muffin! To play, each of us has to create one crazy muffin, putting any ingredients that we want in that crazy muffin and eventually, we have to eat it!

So this is what we did...

My crazy muffin is the one with extra extra large handful of chocolate chips. Chocolate... in the voice of Homer Simpson... LOL!

My son's crazy muffin is the Christmas plus Valentine's day one with 4 dried cherries and 8 dried blueberries... I think his is seriously crazy!!! Good that he is loving it.

These are our crazy muffins after baking... Then, my husband came along and ate my crazy muffin!!! D'oh!
Very moist and chocolaty! At least, I get to enjoy one of these...

Here's the recipe mostly adapted from the book, Feast by Nigella Lawson or here at Food Network or here at Cooking Channel

Make 12 standard size muffins
250g all-purpose flour
2 1/2 tsp baking powder
25g best quality cocoa, preferably Valrhona Dutch processed ones
1/4 tsp salt
125g caster sugar
(original is 175g but I reckon this reduced amount added is just right for us)
150g dark chocolate chips, plus 1/4 cup or more for sprinkling, preferably Callebaut dark chocolate callets with 70%
1 cup (250ml) milk
90ml (1/4 cup plus 2 tbsp) vegetable oil, preferably rice bran oil
1 large egg, 80g each
1 tsp vanilla extract

Preheat the oven to 400°F or 200°C or 180°C fan forced

Line a muffin tray with paper cups.

Measure and pour all the liquid ingredients into a mixing bowl. Add the egg into the mixture. Using a wooden spoon, mix to combine.

In another mixing bowl, place flour, baking powder, cocoa together. Sift in the dry ingredients into the wet ingredients and add in the chocolate chips. Mix all together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cups. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 mins or until the muffins are dark, risen and springy.

    But this one's a keeper.. Nothing can go wrong with chocolate chip muffins.. And if you know me by now, you should know I love stir & bake, no need to whisk, haha..

  21. Ah yes, its so hard to find time to bake with my kids nowadays too. So yesterday I just baked a butter cake on my own (their fav) and surprised them when they got home from school. Still a pretty good feeling to see the smiles on their face.

    Made these before and agree they're delicious!

  30. Hi, don't know what happened to my comments earlier if it made it through. It Didn't appear. I wanted to know your opinion on the baking soda ingredient Nigella used. Its supposed to react with the cocoa powder as a leavening agent or something.
    I tried it 3x and all the time it came out bitter and some kinda chemical or plasticy taste to it. And saw yours without it. Gonna try this for sure. I

  32. Zoe, hah..hah.. I had a good laugh at your crazy muffin game! It does sound like fun but putting extra choc chips is not crazy at all. Your boy's crazy muffin is so colorful. I am sure it was very edible!
