Bobby Flay's French Crepes served with Fat Free Sugar Free Zero Calories Chocolate Sauce


Is today your perfect day? I just had one recently...

On one perfect sunny day, my kid was in school and my husband was at work.

I was all by myself at home. It was quiet and so I had the music on.

I was dancing in my kitchen and thinking to cook something nice and easy for myself...

For me, I have decided to cook these nice and easy crepes. Plus, I'm eating these crepes with lots of fresh fruits served with a fat free, sugar free and zero-calories chocolate sauce.

Zero-calories chocolate sauce??? You must be thinking... It must be too good to be true!!! Yup! It is true and this is it...

I like to look at the product closely and see the benefits of enjoying this sauce!

Now, let start cooking the crepes...

First I whisk the flour and salt together.
... and whisk again.
This resting step is important.
Cook and flip!
Arrange strawberries on the crepes and fold the crepes into quarters to enclose the fruits. 
This is the moment that I have been waiting for...
CHOCOLATE!!!
Perfect!
I need more chocolate sauce to eat with more strawberries!!!

Being zero in calories and fat, I was not expecting this chocolate sauce to be super thick or luscious and I'm really surprised that it tastes pretty good!

Being sweetened with Stevia (a natural sugar substitute), the sweetness of this sauce is just right and I can't detect any bitter after-taste at all.


Before proceeding on to the recipe, I like to make a disclaimer here that I'm not paid by Nunaturals to promote their products. I was given these samples to try and like to share my most honest opinions to my friends and all readers.

Seeing the benefits of Stevia being a calorie-free sweetener, I like to strongly encourage people with diabetic and weight control problems to enjoy their food better with Stevia. You may wish to see here at Taste.com to know how to use 
Stevia as sugar substitution for cooking and baking.

Although I like the fact that Stevia is noncaloric, I like to emphasis that the consumption of 
Stevia should be in moderation as excessive consumption may cause some side effects for some people especially those with 1) ragweed allergies, 2) low blood pressure or 3) difficulty to control blood sugar levels. Personally, I think that pregnant or breastfeeding women should avoid consuming sweeteners too... Well, this is my very very very personal opinion.

Me? I like to moderate everything that I consume and so I like to enjoy the benefits of both Stevia and sugar.



And here's the crepe recipe that is mostly adapted from Bobby Flay.com to serve just one happy person.

Make approximately 3-4 large crepes

37g (1/4 cup) all purpose flour
a pinch of salt
60ml (1/4 cup) whole milk
2/3 tbsp water
1 large eggs
15g (1 tbsp) unsalted butter, melted and cooled, plus more for the pan

Whisk together the flour and salt in a medium bowl. Whisk together the milk, water, eggs and butter in a small bowl. Add the milk mixture to the flour mixture. Cover and let sit at room temperature for 30 mins or refrigerate for up to 1 day.

Heat a 6-inch (15 cm but mine is 26 cm) nonstick sauté pan over medium-high heat and brush the bottom and sides with melted butter or spray with nonstick cooking spray. Place a 6-inch nonstick pan over high heat. Spray with cooking spray and reduce heat to medium. Ladle 2 ounces of the mixture into the pan, swirling to evenly coat the pan with the mixture. Cook pancake until just set on first side, approximately 1 min. Flip over and cook for an additional 20 to 30 secs. Remove to a plate and repeat all steps with the remaining mixture, stacking the pancakes and covering with foil to keep warm.

I like mine to be served with strawberries and blueberries plus lots of chocolate sauce. You can also serve these pancakes with any chocolate sauce (including the zero calories that I had) or this no-cream chocolate sauce which is less guilty and super delicious too!

  1. Oh boy! Your crepe looks so good, thin and fragrant.. I could imagine the smell when you flip them on the pan.. The egg and butter smell, ooohhh la la... I am easily contented with honey+butter, or just kaya with my crepes.. If I make pancakes, Kz is already happy eating them with strawberry jam only..I can finish your 4 large crepes eaten just plain like that!

  3. This recipe looks awesome! I love crepes and pancakes especially but I have no issues with using regular sugar, I'm not a fanatic of sugar replacements but I've seen this around a lot and would be keen on trying it!

    Crepes are the perfect way to celebrate a "me" day and when you add fresh fruit and ooo la la chocolate, oh yummy yummy!!!

I've never even seen this wonderful sugar free chocolate sauce, unless I missed it in our supermarkets, or it's still new here, in S. Florida! I love how you made the yummy crepes, just for you and on your special 'me time' day! Every time I make crepes I feel like I'm in a 'crepe factory' in my little kitchen because, I have to make mine with 2 cups of flour, and at least half a dozen eggs...to have extra to freeze for my family!     Yummilicious looking crepes with fresh fruits! Zero-calories chocolate sauce.. got to be kidding! Too good to be true eh?

    I just want to find out, if these stevia products that you're using in your cookings and bakings, does the sweetness stays at your tounge for quite sometime? I had stevia tea before and after drinking, I can still taste the 'sweetness' for quite a while...

      I'm really surprised that the zero calories chocolate sauce taste really good. I must admit that it is not thick and creamy but the sweetness is just right for me.

      You are right that the taste of Stevia is never the same as sugar and I didn't mind the difference. I guess it is up to each individual preference.
