Comparing with our last summer, I reckon that our current Aussie summer is pretty mild. Or maybe the worst of this summer hasn't arrive yet ...
Today is going to a warm day. Fortunately, today is not awfully warm but just the summery kind of warm. Good that I have prepared these tropical-style popsicles to enjoy this beautiful summer day.

Before using the Tovolo Bug Pops mould, I was using popsicles moulds which are in an inseparable set of four. This means that I have to un-mould all four popsicles under the running water even I'm going to eat just one popsicles. I can leave the uneaten popsicles in the mould and re-freeze the popsicles again but there will be empty mould that is taking space in our freezer for invalid reason.
After trying this Tovolo Bug Pops mould, I gave my inseparable kind of popsicle moulds to my friend instantly. Glad that my friend doesn't mind :p
2) The popsicle cups can be individually used which means that I can make any amount of popsicle (even one!) that I want. This also means that I won't waste any freezer space with any unused mould.
3) These popsicle cups are attached into stands in twos and so it is not bulky to store in any freezer with those with limited or narrow freezing space.
4) I promise that you wouldn't need lots of muscles or pulling strength to un-mould these. These popsicles made with this product are extremely easy to un-mould. Just place the cup under running water for 1-2 mins and the popsicles can be removed from the cup easily.
5) As there is no pulling involved when removing the popsicles from the cups, the sticks can stay on the popsicles very well... Yeah. No worries at all as there won't be wobbly ices falling off the popsicle sticks!
6) These popsicle sticks, cups and stands are all very easy to wash as there are no inaccessible angles to reach. Too lazy to wash anything??? Then, you are like me! Just chuck these into a dishwasher because they are dishwasher friendly!!!

Here's the recipe that I have mostly adapted from Donna Hay Magazine, Issue 79 Jan/Feb 2015.
The original recipe uses the whole can of lychee plus 125g raspberries and extra coconut water to make 8 popsicles but my son said that he likes his popsicles to be all lychee and also with lots of lychee and so I have used the whole can of lychee to make only 4 popsicles. I have to say these not-too-sweet popsicles are sort of the coarse icy type but my son said they are very yummy :)
Makes about 4 popsicles
1 x 560g can lychees in syrup
1/2 cup (120ml) coconut water
Drain the lychees, reserving 1/2 cup (120ml) of the syrup. Chop the lychees and divide between the popsicle moulds. Place the coconut water and the lychee syrup in a jug, mix to combine and pour into the moulds. Insert posicle sticks and freeze for 4-5 hours or until frozen. Remove from the mould and serve.

Those Popsicle molds are so modern. I think I still have a few of those old-fashioned ones around here from the 60s, lol...
Lychee and Coconut must taste yummy together. It may surprise you but I wouldn't mind having one now because it is so dry in the house with the heat on. (I guess I'm just never pleased, lol:)

ReplyDeleteI'm kicking myself because I didn't invent it! I dislike the juice dripping from popsicle stick and end up having sticky hands. This is neat and cute invention! It's still cold to have popsicle here but I will keep the recipe for warmer weather.
