As I aged, I prefer my life to be simple.
I hope that I don't sound like an old haggard lady saying this and like you to see my point on how I truly appreciate the beauty of being simple.
I begin to develop this preference in these recent years whenever I have my quiet moments. I tend to appreciate every single thing as it is. To me, being simple helps me to be content.

This is one of the simplest vegetarian dishes I ever made.
It is made of simple and easily available ingredients like mushrooms, tomatoes, pesto and bread crumbs.
It is really simple, easy and straightforward to make. And, the recipe is from the book, ABC delicious Simple.

This latest bite-sized book is one of the ABC delicious books that I have recently reviewed at here, here, here and here.
Like the two books that I have recently reviewed, this book is another fantastic creation by the best selling Australian author Valli Little and her team behind Australia's ABC delicious magazine. In this book, there is a total of 60 recipes and all are very simple and straightforward to cook.
Needless to say much, please allow me to show you the simplistic way of making this dish.
Wish that I can show you the faces of my family enjoying every single bit of this dish.
Although it is a vegetarian dish, my meat-loving husband and son are not complaining when they were feasting this ... Surprise! Surprise!

First, I gathered the ingredients like these cherry tomatoes... |

As mentioned in the recipe, you can use freshly processed crust-less sourdough bread crumbs or any kinds of pesto and I have used panko crumbs and sun-dried tomato pesto to make my dish. |

Next, I did some oil brushing and assembled the ingredients in the prepared tray. |

Season the dish with salt and pepper |

... and bake for these in the oven about 15 minutes or until the mushrooms are tender. |

Drizzle with balsamic vinegar and serve! This can't be easier or simpler... |

... but it can be very delicious!!! ... with its complex 5-dimensional sweet, sour, salty, "meaty" and crunchy taste and texture. |

Zoe, these stuffed tomatoes look and sound delicious! It is easy to like mushrooms as they can be "meaty" and absorb flavors very well.
