Like Subway Dark Chocolate White Chocolate Chips Cookies

A promise is a promise...

Otherwise, my son will never stop nagging at me... LOL!

What promise?

I have made a promise that I will bake Subway-like dark chocolate white chocolate chips cookies for my son because he was upset one day that he couldn't order his chocolate white chocolate chips cookie from a Subway store that runs out of these cookies. What to do??? You see... I'm a mum.

"Mmm... These chocolate cookies are yummy! They really taste like Subway's cookies." said my son with his raised eyebrows and a muffled voice. He sounded muffled because I can tell that he was impressed. So impressed that he had to say something even though his mouth was so fully filled with these cookies. LOL!

"See... I promise you that I will bake these cookies and I did!"

"Thanks Mummy."


"Aww, you're so sweet!" Seeing my son enjoying these cookies is like having him hugging me.

So what happened next? I didn't stop baking these cookies because these are one of my son's favourites. Well, you see... I'm a mum.

How did I find this recipe?

Yes that I did many Googling, researches and several trial baking and found this recipe!!! Really!!! Absolutely no bull! LOL! Try it and see it yourself. This recipe can really bake the MOST Subway-like dark chocolate white chocolate cookies.

Here's the recipe that is adapted from The Pioneer Woman Cooks / Food Network.

Makes about 30-34 medium sized cookies

150g (1 1/4 stick) butter, well softened at room temperature
200g (1 cup) caster sugar
1 large egg, at room temperature and roughly beaten with a fork
1 tsp vanilla paste or 1 1/2 tsp vanilla extract
150g (1 cup) all purpose flour
35g (1/3 cup) cocoa powder (mine is Dutch processed cocoa powder, Valrhona)
1 1/2 tsp baking powder
1/2 tsp salt
130g (2/3 cup) dark chocolate chips (mine is Callebaut dark chocolate callets with 70% cocoa)
180g (1 cup) white chocolate chips, plus 20g extra to top before baking

Important: Please be aware that altering any amounts or substituting any of these ingredients especially the butter, sugar and flour will make your cookies less Subway-like.

Preheat oven to 350°F / 180°C. Line baking trays with baking paper. Set aside.

Using an electric mixer with paddle attachment and medium mixing speed or a wooden spoon, cream butter and sugar for 2-3 mins or until just fluffy. Add egg gradually and make sure that the egg is thoroughly mixed into the butter mixture after each addition. Then, beat in the vanilla.

Combine flour, cocoa powder, baking powder and salt and sift the flour mixture into the butter mixture. Then, use a spoon or spatula to fold in the sifted flour mixture into the butter mixture until it forms a dough. Stir in both chocolate chips.

Using a cookie scoop or two tablespoons, scoop one tablespoonful of dough onto the prepared baking sheet with 2-3 cm between each other. Top each cookie with 2-3 extra white chocolate chips. Bake for 11 mins or until the cookies are firm at their edges and yet they are still soft in the middle. Allow cookies to cool slightly in the trays for about 10 mins. Then, transfer them onto a wire rack to cool completely. Serve and enjoy!

Store cookies in airtight container at room temperature for less than 3 days as they will lose its chewiness and become less "Subway" after the 3rd day of bake.
