Japanese Honey Teriyaki Chicken Meatballs - Fat Reduced and yet so Tasty and Juicy!

Have you been trying to cook healthy food for your family?

So, have you tried doing healthy swaps like...

  • from fatty meat to lean meat?
  • from deep frying to pan frying?
  • Or from more meat to less meat with more vegetable?

Have you tried using lean chicken mince to cook healthy food and it always turns out to be dry and disappointing?

I know this feeling.

I heard an accidental confession from my son and husband once when I used lean chicken mince to make a healthy chicken spam at here for our Rilakkumma sushi. The bear sushi were cute and fun to eat but just not moist enough for my fussy son and husband. Hmmm...

No worries today because I like to share with you this simply amazing down-to-earth chicken meatball recipe. A recipe that we truly love because it can make low fat mince chicken meatballs always so tasty, moist, juicy and yummy!

Guess what? The magic ingredient is actually the firm tofu!!!

Extremely Chocolaty Fudgy Double Chocolate Fudge Cookies (Anneka Manning)

Love CHOCOLATE?

And love extremely chocolaty fudgy cookies?

I mean cookies that are fully loaded with chocolate and chocolate chips?

Yes, of course! And we love these cookies!!! They are so irresistibly incredibly YUMMY!!! Eating these cookies is like eating spoonfuls of moist Milo (chocolate malted milk powder)... with fudgy moist cake-like texture with crispy edges!

This recipe originates from one of my favourite baking book, Bake Class by Anneka Manning. I have to say that I love Anneka and her book because everything including these cookies that I have baked from this book always turns out to be as good as what I expected. And I hope that you will like this recipe too.

Says who? The recipe at Saveur! LOL!

I must admit that the name of this bread recipe sounded a little too exaggerating. And you must be wondering... Why and how this recipe "the fluffiest white bread in the world"?

These days, my family and I have been relying a lot on Google and Siri to answer our questions. Do you? When I searched for "fluffy white bread recipe" at Google, I found this Fluffiest White Bread in the World recipe at Saveur and so I incorporated this recipe to bake my earlier Cheesy Earthquake Bread at here and the bread is awesome!!!

Being tested and well-liked, I tell myself that I MUST use this recipe to bake our daily sandwich breads too and I did...

Like BreadTalk Soft White Cheesy Earthquake Bread - Recipe One

Have you tried the Cheesy Earthquake Bread from BreadTalk bakeries in Singapore?

Unfortunately, we have not!!! Why?

My son and I love cheesy breads and we have came across those yummy cheesy earthquake breads at BreadTalk bakeries when we were in Singapore. However, whenever we were back in Singapore for our holidays, we had really limited stomach space to indulge!

You know... we can only eat this much and can't eat all!!! Then, I remember my blogging friend, Diana has a good BreadTalk cheesy earthquake bread recipe in her blog at here and told my son... We will bake this bread when we are back in Melbourne and so we did!

How to bake an Ultra Soft Pandan Chiffon Cake with Less Cracks?

If you are a chiffon cake enthusiast like me, have you wonder...

Why are some chiffon cakes so nicely baked with no cracks? And mine has.

Why are some chiffon cakes so nicely baked with flavorsome dark crusts? And mine are not.

I know why! It is due to THE RECIPE and also THE OVEN!!!

Here, I will be sharing a recipe and also a baking technique that will bake an ultra soft pandan chiffon cake with the least cracks.
Why the least cracks? Why not no cracks at all? Like my other ultra chiffon cakes ultra soft chiffon cakes at here, here, here, here, here, here, here and here, this pandan chiffon cake recipe has NO chemical agents like baking powder, cream of tartar or any cake stabiliser added to stabilise the cake structure. Thus, it is unavoidable to have minor cracks on these ultra soft chiffon cakes and some might shrink a little. For this cake, the least that I can do is to bake it with no major cracks. Please allow me to explain further...

This is the ultra soft pandan chiffon cake...
that has no added chemical agents and the least cracks!

Super Moist Blueberry Muffin Tops

Are you the kind of person who eat the muffin tops and chuck the rest away?

Feeling guilty???

I'm relieved if you are guilty! Or, I'm relieved because I know that you can't see my guilty look. *Giggle*

Having said that, I like to clarify that I'm not the kind of person who waste food but I do have preference for muffin top rather than its bottom.

Muffin tops? If you are a Seinfeld fan, you probably know what I'm talking about. There is a Seinfeld episode named The Muffin Tops in 1997. While eating a muffin, Elaine gave an idea to her former boss. An idea that she eats only the muffin tops... resulting a store that sells just the muffin tops! After this episode, many muffin-top-loving people like me realized that we can bake muffins in the form of muffin tops and also resulting muffin-top baking pans selling in many kitchenware shops.

Muffin-top baking pan? Actually, you don't need a muffin-top baking pan to bake muffin tops and I can show you how... You can either bake your muffin tops on baking trays or in standard muffin pans with the least amount of batter. No worries!!! If you already have a muffin-top baking pan... Opsie!
