In this video, please note that I'm using the dark and bold honey to bake my honey cranberry cookies, causing my cookies to be darker golden brown than usual.

Just realised that I can bake these honey cranberries cookies with MORE cranberries! YUM!!!

Update on 30 May 2020:
Then, I discovered that I can bake these honey cranberries cookies with NO egg yolk. And they are crispier and taste less like rock cakes. Interestingly, YUMMY too!!!

If you have been following my blog closely, you might notice that this recipe is actually modified from one of my favourite rock cakes recipes at here. Hence, these cookies taste kind of like rock cakes but less cakey and more chewy with a nice milky finishing taste.
If you prefer your honey cookies to be crisper and crunchier, I have another modified recipe to share... but you will have to bake the cookies with a small amount of cane sugar, cornflakes and without the cranberries.
These cookies are crispy at the golden brown edges and crunchy due to the cornflakes. Due to the presence of honey, these cookies are also slightly cakey but they are not soft at all.
Fragrance-wise, they are like the Honey Joys but way nicer and fragrant than the non-bake Honey Joys. So good that you will want to munch more than one.

Here are the recipes (including my update on 26 Apr 2020).
For both cookies:
Bake for about 10-12 mins (or at 170°C for 15 mins if you are baking the medium bite-size honey cranberry cookies with twice amount of cranberries) or until the cookies are nice golden brown. WARNING: The addition of honey can cause the cookies to brown quickly and so the baking duration can vary depending on the size of the cookies and the type of honey used. If you are baking two trays at one go, swap and rotate the position of the tray halfway through the baking so that that the cookies are baked evenly.
Allow cookies to cool slightly on the tray for about 10-15 mins, then transfer to racks to cool completely. The cranberry cookies are mostly chewy and milky at all times but the cornflakes cookies will become crispy when they are completely cooled.
Serve and enjoy. Store any uneaten cookies in an airtight container at room temperature for up 2 weeks

Note: You can use double of this amount (with 120g butter and 2 egg yolks) to bake about 60-65 mini cookies or about 50 medium bite-size cookies if you want to incorporate more cranberries

15ml (1 tbsp) rum or water
60g unsalted butter, softened at room temperature
1 large yolk (17g), at room temperature - optional*
45g honey, at tepid room temperature
1/2 tsp vanilla paste or extract
110g (3/4 cup) self-raising flour
1/4 tsp salt
15g milk powder
1 large yolk (17g), at room temperature - optional*
45g honey, at tepid room temperature

Combine cranberries and rum in a small saucepan or heat-proof bowl. Heat and stir with low heat or microwave with low power until the liquid is fully absorbed into the cranberries. The cranberries should look plump and juicy. Set aside to cool completely.
For both cookies:
Using a wooden spoon or an electric mixer with paddle attachment, beat butter (and sugar - for the cornflakes cookies only) until fluffy.
Add egg yolk (optional - see above *), honey and vanilla and beat until combined. Sift flour and salt into the butter mixture. Add milk powder and use a spoon or spatula to mix until combined. Add cranberries or cornflakes and mix well to incorporate. For the cornflakes cookies, it is ok if you crush the cornflakes a little but not too much.
Pinch and arrange about 1 tsp of dough onto the prepared baking trays, about 5 cm / 2 inches apart.
Add egg yolk (optional - see above *), honey and vanilla and beat until combined. Sift flour and salt into the butter mixture. Add milk powder and use a spoon or spatula to mix until combined. Add cranberries or cornflakes and mix well to incorporate. For the cornflakes cookies, it is ok if you crush the cornflakes a little but not too much.
Pinch and arrange about 1 tsp of dough onto the prepared baking trays, about 5 cm / 2 inches apart.
